Baked General Tso’s Chicken
In a small bowl, mix together the flour, salt, paprika, garlic powder and onion powder. Dip chicken strips in liquid egg substitute, shake off excess and lightly coat in flour. Place chicken strips on baking sheet and lightly mist with an olive oil mister, or more non-fat cooking spray. Bake chicken in oven for about 30 min, turning over once at halfway through cooking time. Remove from oven and let cool for 10 minutes. While chicken is cooking, combine soy sauce, vinegar, minced garlic, minced ginger, sugar, chili sauce and sesame oil in a small sauce pan set over medium heat. Once sauce has begun to lightly simmer, mix cornstarch and I tsp water in a small cup, and then pour into sauce. Continue to cook, stirring regularly, until sauce has thickened up a bit, about 3-5 more minutes. If sauce remains runny, add in some additional cornstarch, tsp by tsp. Toss the cooked chicken pieces with the sauce and serve immediately. |
Honey BBQ Bacon, Chicken and Sweet Potato Packets
(serves 4)
4 Boneless, skinless chicken breasts
4 slices of bacon
1 cup KC Masterpiece® barbecue sauce
1/4 cup honey
2 large sweet potatoes, diced
4 sprigs fresh rosemary
salt and pepper

- Preheat grill to medium-high heat.
- Lay out (4) 12×12 square of aluminum foil. (I usually like to double these to make sure they are sturdy- so four sets of two).
- In each aluminum foil square, divide the diced sweet potatoes and top with fresh rosemary. Place one chicken breast on each square and sprinkle with salt and pepper to taste.
- In a small bowl, mix the KC Masterpiece® barbecue sauce and honey. Pour the sauce over each chicken breast. (I usually add 1-2 Tablespoons. water to prevent burning).
- Close each aluminum foil square around the chicken to create a “packet.”
- Grill for 30-40 minutes or until internal temperature reaches 170 degrees.
Avocado, egg and toast Breakfast
This one is pretty obvious but, all you'll need is wheat toast, 1 scrambled egg and, 1 half
of an avocado and BAM you'll have the best breakfast ever!

Philly Cheese Steak Stuffed Pepper
Serves 1
Ingredients: 1 green bell pepper 2 slices of provolog cheese about a 1/4 lb of Steak or roast beef slices 2 Tbs chopped Mushrooms 1-2 Tbs White Onion Salt and Pepper to taste 1 tsp butter
Directions: Set oven to 400 Take one Green Pepper and cut the top off. and take all seeds out. place one slice of provolone at bottom of pepper over stove cook mushrooms and white onion until soft and onions are translucent, then add in sliced steak. Cook until barely pink- add a sprinkle of pepper to it Fill Pepper up Top with provolone cheese and place in the oven.
Bake until pepper is soft and cheese is melted..
